Shrimp Noodle Soup

Shrimp: The Jewel of the Sea •
Ingredients:
- 250g shrimp
- 200g rice noodles (or any noodles of your choice)
- 4 cups chicken or vegetable broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 thumb-sized piece of ginger, grated
- 2 cups mixed vegetables (such as sliced carrots, bell peppers, and bok choy)
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 teaspoon brown sugar
- Salt and pepper to taste
Method:
- In a large pot, heat some oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and grated ginger to the pot, and cook for another 1-2 minutes until fragrant.
- Pour the chicken or vegetable broth into the pot and bring it to a simmer.
- Add the mixed vegetables to the pot and let them cook for a few minutes until they start to soften.
- Stir in the soy sauce, fish sauce, lime juice, and brown sugar. Season with salt and pepper to taste.
- Add the shrimp to the pot and let them cook for 2-3 minutes until they turn pink and opaque.
- Meanwhile, cook the rice noodles according to the package instructions until they are al dente. Drain and set aside.
- To serve, divide the cooked noodles into bowls and ladle the hot soup over the top.
- Serve the shrimp noodle soup hot and enjoy!
Tips for Serving:
- Noodles: Choose the type of noodles you prefer, such as rice noodles or egg noodles. Cook them separately according to package instructions and add them to the soup just before serving to prevent them from becoming mushy.
- Flavourful Broth: Prepare a flavorful broth using a combination of seafood stock, aromatics like garlic, ginger, and lemongrass, and seasonings like soy sauce, fish sauce, and chili paste.
